Vegan Chocolate Chip Almond Butter Cookies

These cookies are delicious and extremely easy to make in just one hour you'll have delicious cookies that you can store in your refrigerator in an airtight container for 3 days.



2 cups all-purpose flour (you can substitute it for whole-wheat flour)

2 teaspoons baking soda

1/2 teaspoon salt 

2/3 cup brown sugar 

1/2 cup coconut oil, melted

1/2 cup warm water 

1/3 cup Spread Happiness Almond Butter 

2 teaspoons vanilla extract

2/3 cup vegan chocolate chips 



1. Whisk the all-purpose flour, baking soda, and salt in a medium bowl. Whisk sugar, coconut oil, water, almond butter and vanilla in a large bowl.

2. Add the flour mixture to the sugar mixture and stir until just combined. Fold in chocolate chips. Cover the bowl and let stand at room temperature at least 30 minutes.

3. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Using about 1 heaping tablespoon per cookie, drop mounds of dough, at least 1 inch apart, on the prepared baking sheet. Flatten the mounds to create 2-inch-wide cookies. Bake until lightly browned, 10 to 14 minutes. Let the cookies cool on the baking sheet for 2 minutes, then transfer to a rack to cool completely. Repeat with the remaining dough.
